Congrats Manda! He may must not like supers. I have a female that doesn't like supers, she eats silkworms, butterworms, and waxworms, no mealies, no supers. My other female prefers supers. So, it may just be him. You can try other foods as well.
The eggs look viable too! The first one has a clear viable embryo, the second is harder to see, but I think it's good. Should be fun Normally from one breeding they play at least 4 clutches, mauve as many add six. So she may have had a few before you got her, but I would think you have at least one more clutch coming. Just make sure to feed her well in between, in case she stops eating for week or so before laying again.
